Peach Salsa

Peach Salsa

  • 4 cups fresh peaches, peeled and coarsely chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 4 jalapeno peppers, minced
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 1/4 cup white vinegar
  • 1 tsp grated lime zest
  • 1 1/2 cups white sugar (up to 3 cups to “turn down heat”)

Mix all ingredients but sugar in large pot and bring to a boil. Stir in sugar. Bring to a boil.

Pour into prepared jars, leaving 1/4 inch head space. Seal, and process in boiling water for 15 minutes.

Makes about 6 pints.
