Peach Salsa
- 4 cups fresh peaches, peeled and coarsely chopped
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 4 jalapeno peppers, minced
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1 1/2 tsp ground cumin
- 1/4 cup white vinegar
- 1 tsp grated lime zest
- 1 1/2 cups white sugar (up to 3 cups to “turn down heat”)
Mix all ingredients but sugar in large pot and bring to a boil. Stir in sugar. Bring to a boil.
Pour into prepared jars, leaving 1/4 inch head space. Seal, and process in boiling water for 15 minutes.
Makes about 6 pints.
