Ingredients
- 10 cups peaches, pitted, peeled, and chopped
- 4 tbsp lemon juice
- 1 1/2 tbsp clear vanilla extract
- 2 1/2 cups white sugar
- 2 cups water
- 3 tbsp Sure-Jell pectin (more for thicker syrup)
Instructions
Put peaches, lemon juice, vanilla, sugar, and water in a large pot. Using immersion blender, blend until smooth. Bring a boil. Add pectin and return to boil.
Ladle into prepared jars and process 15 minutes in a water bath canner.
Makes about 6 pints
