Raspberry Jam Thumbprint Cookies

Holy Wow! These were a HUGE hit Christmas of 2021! We can’t stop eating them!!!

Try them with the homemade peach jam….oh dear. *drool*

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 2/3 cup sugar
  • 2 cups flour
  • 1/2 tsp almond extract
  • 3 tbsp milk, divided
  • Seedless raspberry jam (or any other fruit jam)
  • 1/2 cup powdered sugar

Instructions

Mix butter, sugar, flour, TWO tbsp milk, and almond extract. Roll dough into 1-inch balls and place on cookie sheet.

Using a wine cork, or your thumb, press impression in middle of each ball. Fill indention with jam.

Refrigerate cookies for 30 minutes before baking. (Important!)

Preheat oven to 350 degrees. Bake cookies for 11-14 minutes, until very lightly browned and tops are cracking slightly. Do not overcook.

Let cook for 5 minutes.

Glaze

Stir together powdered sugar and remaining 1 tbsp milk. Drizzle over cookies.

Let cook completely on cooking rack.
